here's what you do:
- preheat oven to 325 degrees Fahrenheit
- combine 6 eggs + 3 cups milk = whisk together nicely
- measure 2/3 cup sugar + 2 teaspoons of vanilla = add to egg mixture, beat together until well combined (but not foamy)
- stir into egg mixture 2 cups of cooked rice (leftover plain rice works great too)
- optional: add 1 cup of raisins and cinnamon if desired
- pour into 3 quart casserole dish or individual custard cups
- bake for 30-45 minutes for custard cups or 45-50 minutes for casserole dish (stir after 30 minutes) (if using custard cups put them in a 13x9 casserole dish with 1/2" of boiling water before baking - boiling water so you don't crack your dish in the oven)
- it is done when a knife inserted near the center comes out clean serve warm or chilled (I like them fresh)
- if you used individual custard cups, you may loosen edges with a spatula or knife, and slip them out inverted onto a plate

just so you know, I (try to remember) to pray before I bake anything :)
Sounds delicious!!! Can't wait to try out your recipe. Rice pudding is one of my very favorite desserts. It must be an acquired taste...I know many who don't care for it. I bet yours is even better b/c it's ALL homemade! ;)

to find something comparable. I cannot say the search has been
onerous, and I remain optimistic.
This is how my mother and grandmother made rice pudding. They always added the raisins and cinnamon. It was one of my favorite desserts as a child. I haven't had it in a very long time. Thanks for the reminder. I'll have to make some.
ReplyDeleteHey friend. I love rice pudding but have never made it. Not sure why. I just printed off your recipe and will be trying it very soon. Our chickens are laying well right now also so the fresh farm eggs will be so nice in it.

ReplyDeleteMy Mom used to make rice pudding and it was always so good. For some strange reason, mine never tasted as good as hers. There must have been something special in Mom making rice pudding that made it so good. I will definitely try your recipe because we haven't had rice pudding in so long. Thank you, Anne Marie!
