Cooking what's in the garden.....in season.....is how I love to cook
and besides crisp lettuce, leeks are ready and delicious!!
no trans or saturated fat.........
2g of dietary fiber...
30% Vitamin A
18% Vitamin C
even some Calcium at 5% along with 10% Iron
all in leeks........
sauteed quickly with some mushrooms in olive oil.........
just to where the leeks get softened
serve with rice, roasted potatoes and (optional) strips of beef from the roast you had the night before.......

Oh that looks wonderful! My husband loves cooking with leeks but I don't think he is growing them this year. My kids asked for Jicima but we don't live in the tropics, we live in Iowa! I'm lucky my kids eat anything!
